Here is a chopper hot off the bench, 7 1/2" blade of stainless over 1095 San Mai with a patterned edge treatment. Stabilized Cherry Burl handle with 8 coats of clear lacquer. Nickel silver guard and pin, leather for protection when your not cleaving chicken or vegies. Thanks for taking a look...

I'm not an expert but I'd think the S7 would be the better choice , its a shock resistant steel used to make chisel bits for demolition hammers. H13 is a hot work steel best used in hot stamping dies. Just my .02 Peter

Bead blast after assembly, then clean with alcohol. Very durable finish even after heavy use you can re clean with alcohol and it comes right back. Thanks for the kind words, Peter

Welcome to the dog pound, nice to see another cheese head knife maker. Both Janesville shows(spring and fall) are noteworthy events to attend, plenty to see and lots of talented people in the room. Good place to pick up supplies and knowledge. Peter

Looks great! The gage set up is fine, it shouldn't show hardly any preasure until the ram is given some resistance. If its showing preasure in when its running idle, that means there is a restriction somewhere.......that's not good and it won't be long before it shows you where the problem is...
