Damascus and High Carbon Steels are not food safe -- aka the Jay Fisher Rabbit Hole

I'm a wee late in responding, but I must say that pretty much everyone else covered the bases as well or better than I ever could. I can hardly stand to eyeball his "creations" for more time than it takes to blink, yet I can marvel for hours and hours over Scagels, Morans or Yoshiharas. Honesty...

Damascus and High Carbon Steels are not food safe -- aka the Jay Fisher Rabbit Hole

I wouldn't use a Jay Fisher knife if you gave one to me and then paid me. His status as a pariah is well-earned and designed to increase purchases from those who want to feel better about themselves and who don't know any better....he is the Cutco of custom knifemaking. Do not question ANYTHING...

    I took the plunge......

I use two large electric roasting pans....one for fast quench oil, one for slower oil. Turn the dial and warm your oil to the proper temp and put the handy lid on for storage. Less than $10 each from yard sales and thrift stores. -Mark

Questions about this old Mexican knife I came across

It's a very common looking Mexican tourist blade. Made by dozens of different artisans for decades. Without a specific maker's name, like P. Lepe (and even that is probably subject to imitators), finding any kind of history is basically impossible. -Mark

    Old Old Hickory?

Forgecraft marked with a stamp on the left side of the blade, about a third of the way from the handle scales, nearing the spine. Depth seems to vary. If it just isn't there, it may have been made by one of the big boys for a no-name kitchen supplier. -Mark

    Old Old Hickory?

My best guess is a ForgeCraft...they seem to be the ones with the lightest, smallest stamps, and I believe they had no handle markings. -Mark

    How Young is too young

My two have reached the age where giving them a bit of responsibility, knowledge, and trust are producing great results. Pride in their work builds self-esteem and their new-found capabilities set them apart from their classmates. Here are my daughter (age 13) at the forge and my son (age 11)...
