Looks great! I never understood the value of a boning knife until recently when I used one gifted to me to debone an Impala that I had hunted. It was just so much easier to get around the rib bones and the vertebrae and getting the meat off. I now want to build myself one.

Do not put water. If you can, use denatured alcohol to show the figure.
