    3/32" will work if you want them on the thinner side and I have used that size successfully, and I use 1/8" and a strong distal taper and taper handle with a Full Flat grind to thin things out and give the ranch style steak knife look, for more sportsmen minded customers.

    I agree with Stuart, The 150mm Petty design is a great knife pattern for the kitchen and you will learn a lot making one without having to grind a lot of steel. I find that 3/32" or 0.070 in thickness works great. You want to stay under 1/8" in thickness.

    Filework and epoxies... bad combo?

    Vaseline works too if you don't have any wax around. Just be careful and apply it with a Q-tip just wear you want it.

    Generally, people have been told that full tang knives are superior to a rat tail or molded tang. The exceptions are people that like the older French Sabatier rat tang Chef knives and folks that know Japanese knives. Now if the price is low enough on a custom/Homemade with a molded I think...
