My local butcher charges more per pound for neatly wrapped steaks, roasts and burger than he does for an uncut side of beef. It's the same amount of meat, from the same animal. No one complains about that!

DON'T BUY IT. I have one and there are several problems... It's a royal pain to get it to track right, and get the blade under proper tension for anything resembling a precision cut. Forget re-sawing blocks into thinner pieces. The stock blade is very coarse, not at all suitable for cutting...

I would kind of doubt it, there's very little alloying in 52100, according to what I can find... <2% chromium and barely a half percent manganese.

I don't know. The Knifemaker's Guild embraces both forgers and stock removers, but if I had to hazard a guess I would say most members are stock removal guys. Perhaps Mike Carter will comment, he's a long-time member and works a good deal with promoting the Guild. Cool guy, too :) PS Chaps, I...

I like it just as it is. That's a great way to keep costs down but still provide a very tough, hardworking knife.
