In my opinion I would look into VG-10 or D2. I hear vg10 really takes an edge and holds it and it was actually designed by Takefu Special Steel co just for kitchen knives. And it's proven itself well enough to be used by Spyderco as well. As far as D2 goes I have heard nothing but great things...

Heat treating is the process that turns a regular piece of steel into a knife. All other steel scraps shaped like knives are never truly knives until they've been hardened to take and hold an edge, but hopefully not to hard to where they chip, crack and/or break.
