    I would grind then to the point of ready to roll the edge to sharpen then hand sand up to at least 400 grit. SS blades will be wrapped in foil so decarb will be all but non-existant and hand sanding out 220 and lower belt marks on SS will not be fun.

    Not sure why you want to use a pizza pan. To keep dust out of the motor? You should be using a TEFC motor and dust won't be a factor. I think the pizza pan will just get in your way. Use an air hose to clear off the shaft and motor every once in a while and you will be just fine.

    Awesome score! The tooling will cost almost as much as the machine. The only thing I can suggest is to get the best vise you can get. I bought a cheaper knock off vise for my small mill and it wants to raise the work piece a little when clamping it down unlike a Kurt.

I doubt any of the folks I sell knives to will have a bench grinder and most will use a stone or something similar to sharpen it so I try to make it easy on them to get the hair popping edge back...

    That is an awesome second knife. If I had to pick one thing I didn't like it would be offset pins. To me they don't do the knife justice. You did a really nice job fitting them and avoiding halos. But if you want to do off set pins just make sure they are symetrical across the handle.
