I highly recommend Hofi's forging method. About 5yrs ago, I broke my shoulder in a fall. Even my orthopedic surgeon, who is a long time knife customer, told me my forging days were over. Hofi read my post about the shoulder in a knife forum and suggested I try his method before I gave up.

This is the 7th Santoku style knife I have made for a family of chefs in Canada. Hand forged 1084FG, OAL 11-1/2", blade 6-3/4", curly maple handle. Not my usual style, but a nice change of pace.

It's been so unusually cold here that for the first time the waterfall in my garden pond is iced over. The water is still flowing under the ice. Each morning I pour boiling water near the stream to keep an open spot to let the gasses out.
I found a dog that had been left behind by some people that moved out of a rental house near me. They moved out last Thursday and I found him Saturday, almost dead. They left him chained outside with no food and his water dish was frozen solid.
