This is a 3V chef I made. 9.5" blade and stall mat handles It is not the prettiest to look at, but with a super thin sharp edge it is a crazy cutter

    how thin before sharpening

I take the intended purpose of the knife in account. I just finished two chef knives that were at .003" before sharpening. The Camp Chopper I just did was .025" before sharpening. Sometimes I will leave the big knives a little thicker and dress a tall blended convex edge on them. Most...

    Gorilla Glue?

I use Gorilla Glue to put liners to scales and when I am doing bolsters. This lets me pre-assemble everything. After the Gorilla Glue set I drill some holes through the liner to the scales so the epoxy can adhere to the scales as well, kinda like small hidden pins of epoxy. All my attaching...

    Problem with Craftsman grinder

I used a Craftsman as well for about a year and never had that problem. Late last year I bought a Grizzly and never looked back at the Craftsman. I was amazed at the difference and the belt selection to boot. Glad you got it running.

    Leather Carving WIP

That looks good. I despise leather work as a knifemaker. It is good to see people that enjoy and are good at it.

I like the looks of the mill scale left on the Santoku with the opposite side polished. Nice work.

    My Next Two Designs

My wife designed something similar to your top knife for me to make. I think it is a functional design for surveyors or land owners.

    What steel to use ?

If you are farming out the heat treat yoou could also consider M4 for your high carbon and S90V for your stainless. I had my M4 treated by Peters to 64 Rc and the edge holding is absolutely amazing. I have yet to grind any S90V but it is on order. Another carbon steel to look at is CPM 3V. I...
