well here is my attempt at a bushcraft knife/ utility knife. micarta handles, 3/32" O1 tool steel blade, etched and blued, then a once over with fine scotch bright... what do you think

That's nice work, the only concern I have is that the handle looks a little small, but I have large mits.

i like it my self & like doug said im over 6 foot so my paws ore big ive made some with smaller handel they work fine

Nice work,
A couple of suggestions for your next one are that 3/32" is More of a culinary thickness.

If you want a blade for the vigor's of building a lean to, making a fire etc I would suggest you go with 1/8" steel or larger. A second point is along with maybe being to small? it would be more user friendly to try to contour your handle a little more so its not quite so blockly, Handles like this will tire you and possibly give you hot spots after a few hours of work.

On the handle size, I guess my thoughts go to a brush clearing knife that I built with a small handle. The small size makes it hard for me to control it.
