    To be honest, chefknivestogo.com was my best reference for this type of knife, because there is a large honesuki section that shows dozens of cross sections. Biggest takeaway -- almost every maker has their own design, from convex to chisel to flat grinds.

    Yes, they're great and they help me avoid a lot of hand sanding. Also, the fine belt with some WD-40 provides a nice satin finish that could easily pass for your final if that's your goal. There are a bunch of youtube videos about them and how people are happy with them.

    Well, I got the 2x72 in April. It's great and the collective advice I received in here was right on. However....I now really want a proper oven to start making stainless. I've had to turn down a few people asking for filet knives since I live near an active fishing area. Bump.
