I finally pulled the trigger on a new tempering oven. The full sized gas oven worked great, but a bit of an over kill for smaller blades, one at a time. It’s an extra large counter top oven, smaller than the gas oven, but still large enough for most blades.
I’ve done a couple blades in it, in the “turbo mode” (internal fan for air circulation) and it works great,… judging by thermometer, nice even spot on tempering colors and testing. I still use a muffle inside, just to split hairs and keep it even.
I've tried other smaller, less expensive toaster ovens with good results, but this one is just bigger, better and more trouble free... more than worth the $100.
... and you can bake two large pizzas in it!
