You want to mark the centerline on the spine as well. This gives you a thickness reference to each side as you go.
If you do a full height flat grind, distal taper basically creates itself. You’ll simply keep grinding past the spine and progressively so toward the tip. In other words, grind the knife as you normally would. Then concentrate on the taper by bringing the bevel grind past the spine, working from the midpoint of the blade to the tip, and occasionally start your pass farther back for blending purposes. Repeat the process gradually up the blade until you reach your plunge lines.
