Heat Treat Question

I am sending my first three blades off for heat treating through Texas Knifemaker's Supply. The blades are all hollow ground from ATS-34. The blades are all under 10 inches in length and are 5/32 thick. My question is do I need to specify a RC hardness and should I pay the additional $4 per blade for a sub-zero quench?

To be safe, yes on the hardness spec. and definitely yes on the cryo. Be sure that the hardness you request is within industry norms.
