Hi,
This is my newest Culinary knife.
I call it the Italian Job since it's modeled after some of the Chef knives you find in the northern Medditerrain Sea, S.France & Italy. This is the baby one. The other of this two knife series is a 11 1/2 Blade. Will have one of those to post soon.
Steel. 440C Stainless from NSM.
RC. 60 HT by Paul Bos.
Blade. 8 1/2"
OAL. 14"
Handle. Stabilized Cal. Sycamore From Mark Farley. It's a Burl.
Loveless all Stainless Steel handle bolts.
Rhino Custom Knives Rhino Head with Red epoxy in Aluminum tube.
The extra length counter balance's the knife for a Neutral balance at the index finger cutout.
