Decided to do a pair in a profile I'd done for a neighbor from a file.
Weight : Rosewood/Apple 124g/123g
Blade lengths : 110mm X 28mm X 3mm
Handle length : 115mm
Steel : 01 - 3mm X 40 mm
Blade grind/finish : Full flat grind, Satin finish 400 grit
Scales/Handle: Rose wood/Apple/ 3mm stainless pins/Red & Black Vulcanized Fiber
The Rose wood knife is an 80th birthday gift for my father in law and the apple is going into my kitchen, I want to see how the edge loads up to everyday use.
I asked my neighbor how the edge was on the knife I made him, his reply was he'd like it a bit sharper. Went in to take a look, he was using a "glass cutting board" he now has a resharpened knife and a timber cutting board.
