Another nice one, OP. I've always wondered about 15N20. I have a stack of thin stock but have never used it. How well does it hold its edge?

I was actually able to get it in 1/8”. I’ve read it does great but I haven’t used it enough to know. But folks who have are big fans. It takes a wicked edge.
