So I ordered some steel from my favorite steel supplier and upon opening the package, every piece had some bad bowing and twisting in the 48 and 36" bars. The bars are stainless so they must be sent out-of-house for heat treat making it a nightmare (darn expensive) to have them straightened at...

I'd hate to tell you but the majority of the time those blocks are still green or only partially dried. The wax is meant to allow them to dry slowly and reduce checking and cracking. You may also want to think about stabilizing your block once its dry to forgo the sealing/finishing process...

Check your moisture content before you start cutting into it. When its dry enough, shape it and finish it to a high grit. Seal it with your choice of finish as it has a tendency to move depending on how much white it has. I've had pieces crack along the darker veining when not sealed right.

Eric, check your angle and make sure you're reaching the edge ( I know how this sounds but it happens). Use a sharpie to mark the edge so that you can see your progress. Work up a burr with each stone and strop with some Chromium Oxide followed by leather at the end and you should have a nice...
