If for use on a standard sized knife, I'd recommend 3/8" thick....... remember..... you can always take some away.....but if it's too thin, you can never put any back. :)

Yeah I was figuring 3/8” but wanted to dbl check ... also didn’t want to create more dust/waste than need be
 
the most popular thickness is 3/16" and will work on any knife. If you want heavy surface sculpting, go with 3/8"
1/8 is usually used on folders or small, thin blade. 1/4" is general, all around.

Thanks @BossDog I ordered a set 3/8" this time. Might be good to have the extra material since I'm new to this. I do like the price of the 3/16" better though ;)
