What grind do you use on your chef knives? I cant tell for sure from the pics.

Sorry that's my southern upbringin , sir is out of total respect . The grind on my chefs knives is a hollow grind . I am using a ten inch wheel . Very complicated to get that high of a grind with a ten inch wheel , but I make it work . I wish I had a 14" wheel would be a lot easier !
