This is my third fillet knife. My first 2 were a tad thick, but I managed to get this one thinner. It is .020" at the tip, a about thin enough I think.
So the only thing I don't like about it is, I am having trouble smelling the fresh fish, covered in meal, cooking in the hot oil in the big cast iron pan!!!!!!!2thumbs

I'm working on the getting the smells in! I sold three of these yesterday. Had to order more steel. I thought it was pretty flexible, but my brother-in-law the fishing guru, said it could be thinner. That will test me!
